Vitaminska salata s tikvicama i smokvama za ljetni brunch

Kad se ljeto približi svome kraju pijace nas mame čarobnim mirisom smokava. Smokve su voće koje je autohtono za mediteranske krajeve i Bliski istok. Veliki je broj različitih botaničkih vrsta smokava, ali one koje su odomaćene u našim krajevima su uglavnom zelene i ljubičaste smokve. Zemlja koja ih najviše proizvodi je Turska, a dolaze nam i svježe i sušene smokve. Donosimo vam recept za vitaminsku salatu s tikvicama i smokvama.

Smokve su bogate nutritijentima, od minerala željeza, kalcija, kalija do vitamina B skupine, vitamina C i K, prehrambenih vlakana, a bogate su i karoteneima i antioksidansima.Bitno je zapamtiti da je udio kalcija u 100 g sušenih smokava viši od udjela kalcija u 100 g jogurta, tako da preporučujemo ženama da jedu smokve, em zbog bogatog izvora kalcija, em zbog vlakana koje potiču bolju probavu i pražnjenje crijeva.

Tikvice i paprike isjeći na komade i kratko propržiti na maslinovom ulju. Dodati isječeni paradajz, smokve, gržđe, bosiljak i pinjole, začiniti solju, malsinovim uljem i ocatom od nara.
